Proto-Cosmos | Seasonal Ale with Foraged Elderflower

The second in our series of seasonal pale ales with foraged ingredients (check out the Protosynthesis, the first in the series!). For this ale we've leaned into the wild and wonderful essence of elderflower, a delicate, fresh and slightly sweet flower. We've extracted subtle notes of white fruit, grapefruit and a touch of honey before backing this flavour profile up with lemon balm, an aromatic herb lending vibrant zesty oils and a herbaceous finish to round it all off. Made for longer days and
