Wonderfully dry in a Cotes du Provence style, a careful blend of hand-picked Madeleine Angevine and Rondo, a deep red grape which affords its pretty pink blush. The grapes are pressed together and fermented in stainless steel at 20 degrees for around two weeks before resting on the lees for a further seven days ahead of malolactic fermentation.
