Our first ever Keeve and the inaugural release in the Burrow Hill Experimental Series.Made from the very last bittersweet apples of the harvest using the traditional French keeving method, this naturally bottle-conditioned cider undergoes a slow wild fermentation throughout the Somerset winter. Freshly pressed apples, lemon sherbet lead into vibrant acidity, natural sweetness, bittersweet Seville marmalade and the rich tannic structure of Vilberie apples.
