Lind & Lime Distillery is an independent craft distillery founded in 2018 at Port of Leith in Edinburgh, producing an award-winning London Dry gin — Lind & Lime Gin — made with hand-peeled limes and pink peppercorns as its defining botanicals. The distillery is named after Dr James Lind, the Scottish naval surgeon who proved citrus fruits prevent scurvy, and operates a visitor centre and bar at its stunning Leith harbourside location.
