The recipe for Rafters Restaurant Pivot Gin, to accompany their amazing Pivot cookbook, is based on one of their “tweaked” winter gins. We use cinnamon, blood orange, cranberry, clementine, Douglas fir, and cloves, on top of five more traditional ingredients, to create a complex, yet classic London Dry Gin.
