About
KANPAI is the UK's first sake brewery - a quality focussed sake producer founded in 2016 by Tom and Lucy Wilson, originally established in Peckham, South London, they moved their brewing operation and taproom to Bermondsey, London Bridge in 2023. KANPAI brews a range of premium sake styles including junmai, honjozo, junmai ginjo, daiginjo and sparkling sake. They take a zero-compromise approach to ingredient sourcing and a patient approach to low-temperature extended brewing methods. As well as reviving traditional and ancient sake brewing styles such as kimoto and bodaimoto, they are reknowned for producing progessive styles of sake including wine and sherry barrel aging and traditional 'Champagne' method sparkling styles. KANPAI has pioneered the art of British-brewed sake and played a central role in establishing sake culture in the UK as well as a key member of the international sake scene; supplying to both Japanese and non-Japanese restaurants, bars and direct to consumers.
