Fermented using natural ambient yeast in 500-litre oak puncheons, this wine has a similar bright pink/salmon colour as our normal Rosé but comes with a lovely dark cherry nose and some subtle spice from the oak. It has some real depth and intensity, as the pure Pinot gives the palate a lovely compact and dense middle that drives to a very long finish. It really shows the full spectrum of Pinots character with a lot of evolution left in the tank for those that can show patience. It would be great to be able to do this wine more often, if only we had more grapes.
