Our sparkling wines are made using the Traditional Method, the time-honoured method used to produce some of the world’s finest sparkling wines. This means that their journey from vineyard to glass is beautifully unhurried.The debut St Hilary Sparkling White Wine is a blend of hand-harvested Pinot Noir, Pinot Meunier and Chardonnay grapes picked in October 2023. Crafted by natural wine maker Dave Morris at Mountain People Wine, the wine has spent 12 months on the lees before being released. St Hilary Sparkling White Wine (2023) has been awarded Welsh Wine Protected Designation of Origin recognising its provenance and quality.We know good things are worth waiting for.
