Pomerol is one of the most highly respected red wine appellations in Bordeaux, producing some of the finest Merlot-based wines in the world. For over 30 years, the Catherine Péré Vergé estates have been at the forefront of the region, creating wines of precision and perfection that continue her visionary legacy. Péré Vergé matures her wines in French oak barrels for 12 to 18 months, allowing the bold blackcurrant and plum flavours of Pomerol’s Merlot to meld seamlessly with the mineral, earthy, and cedar characteristics of the oak. Known for their velvety smooth tannins and robust fruitiness, these casks offer a unique and refined maturation profile for whisky. Filled with Annandale Distillery’s orchard fruit-style unpeated new-make spirit, we anticipate a whisky with a rich, smooth mouthfeel, carrying notes of toffee, chocolate, and cinnamon, alongside hints of dark fruit like blackberries. The French oak influence may also introduce a delicate touch of oak smoke, adding further complexity. These exclusive Pomerol casks offer a rare opportunity for whisky maturation, blending the deep fruit intensity of Bordeaux wines with the delicate and refined nature of Annandale’s spirit, resulting in a whisky that is elegant, smooth, and full of character.
