We are delighted to offer José y Miguel Martín’s luxurious Pedro Ximénez seasoned sherry hogsheads. These American oak casks are seasoned for two years with Pedro Ximénez sherry, which is made from naturally sweet grapes. After harvesting, the grapes are sun-dried, intensifying their sugars and developing a deeply rich and intensely flavoured sherry. Pedro Ximénez casks should impart dates and raisin s into our orchard spirit. Complimented by undertones of light cinnamon spice, dark chocolate, caramel, demerara sugar, coffee and honey. José y Miguel Martín remains our preferred sherry wood supplier, recognised for their integrity and the outstanding quality of their sherries. Their casks are highly regarded among Coopers and Distillery workers alike, ensuring an exquisite and refined maturation process for Annandale’s whisky.
