
Native to the Iberian Peninsula and known locally as “Rebollo”, this oak type has seasoned fine wines and combines the structure of French oak with the aromatic intensity of American oak. Appreciated by Spanish winemakers for its richness, we expect it to add new layers of depth and complexity to our spirit. Pyrenean oak (Quercus pyrenaica) has its own unique flavour profile of dark fruit, roasted nuts, caramelised sugar and spice. We’ve been maturing our spirit in this oak for the past five months, and our recent sample shows real promise, developing a rich colour with notes of dried fruit.
