Tawny ports are aged longer in smaller casks, unlike their younger Ruby port counterparts. This extended maturation allows for greater oxidation, turning the port from deep ruby red to amber-orange. This process imparts rich layers of dried fruit, caramel, and nutty characteristics to the final wine. These American white oak casks are used to mature Fine Tawny port for three years. The combination of port influence and American oak seasoning creates a wine with fresh fruit character and a light nuttiness. After three years, the staves are fully permeated with the deep, rich flavors of Tawny port, preparing them for whisky maturation. Annandale’s new-make spirit is expected to extract a beautifully complex range of flavors from these casks. Anticipated notes include dried figs, apricots, and raisins, balanced by delicate spice elements such as cinnamon and cardamom. Additional hints of cream soda, vanilla, and caramel will enhance the whisky’s depth, while roasted almonds perfectly complement Annandale’s malty character. Tawny Port casks offer a refined balance of fruit, spice, and oak influence, making them a unique and dynamic choice for whisky maturation. Their ability to introduce elegant sweetness and complexity ensures a whisky that is both rich and harmoniously structured, adding depth to Annandale’s cask selection.
